Peruvian-style salsa with red onions and lime.

1 red bell pepper
1 yellow bell pepper
1 onion
2 clove garlic
2 tablespoon red wine vinegar
1 teaspoon oregano
1 tablespoon olive oil

Heat olive oil over medium-high heat in a cast iron skillet.

Chop peppers and onions into 3/4" pieces. Add garlic, onion, peppers, and oregano to the skillet and cook until soft, about 3-5 minutes.

Add in vinegar and sprinkle with some salt & pepper. Turn heat down to medium and cook for another couple minutes.
