Salmon Sushi Bake
Baked sushi casserole with salmon and rice.

1 pound salmon
3 tablespoon teriyaki sauce
1 tablespoon brown sugar
1/4 teaspoon salt
1/4 teaspoon garlic powder
3 cup rice
1 avocado, cubed
3 tablespoon spicy mayo
1 tablespoon furikake (optional, but adds a lot)
2 tablespoon crispy fried onion bits
2 tablespoon green onions, diced

Remove skin from salmon and cut into cubes.

Combine salmon, teriyaki, and salt in a bowl. Set aside to allow it to marinate for 10-15 minutes.

In a baking dish, add the rice and pat down to create a flat base. Top with the salmon (and sauce!), then spread garlic powder and brown sugar evenly over the top.

Turn on broiler and cook on the top rack for 6-10 minutes, until the salmon is flaky.

Top with avocado, mayo, furikake, fried onions, and green onions.
