Cilantro Feta Stuffed Peppers
Bell peppers stuffed with feta cheese and fresh cilantro.

4 bell peppers
1 pound ground turkey
1 cup cooked rice
1 onion
3 clove garlic
1 teaspoon smoked paprika
1 teaspoon ground cumin
1 teaspoon oregano
1 cup chicken broth
1/4 cup fresh parsley, chopped
1/4 cup cilantro, chopped
1/4 cup feta cheese
1/2 cup parmesan cheese

Preheat oven to 400 degrees.

Cook turkey over medium-high heat. Once brown, add in minced garlic, diced onion, paprika, cumin, & oregano. Cook until onions are soft, 2-3 minutes.

Drain the mixture and add back to the pan. Add broth, parsley, cilantro, feta, and rice. Let simmer until broth is nearly evaporated/absorbed.

Chop tops off peppers and empty. Fill each pepper with the meat/rice mixture and top with parmesan. Bake until peppers are soft, about 40 minutes.
