Start by patting your wings dry with a paper towel and putting them in a bowl. Then, mix together the salt & baking powder and sprinkle over the wings. Toss to evenly coat the wings.

Place the wings on a wire rack (over an aluminum-lined baking sheet). Put in the fridge to dry brine for at least 4 hours (or up to 24).

Preheat over to 450 degrees. Put wings in (they can stay on the wire rack) and cook for about 40 minutes, flipping them halfway through, until golden brown.

Eat them as-is, or toss them in some sort of sauce before serving.
