1 tsp olive oil
1 cup white mushrooms, chopped
1 lb ground turkey
1 tsp salt
1 onion, chopped
5 cloves garlic, chopped
1 tsp mustard
1 cup cheddar cheese, shredded
12 egg roll wrappers
5 tbsp pickles, chopped
Olive oil spray
Special Sauce

1/4 cup mayonnaise
1 1/2 tbsp ketchup
1 tsp mustard
1 tsp pickle juice

Heat oil in a large skillet over medium-high heat and add the mushrooms. Cook for 2-3 minutes, until soft.

Add the turkey and salt. Cook through until no longer pink.

Add the onion, garlic, and mustard, and cook for a couple minutes until soft. Drain the mixture if needed, then add the cheese and mix thoroughly.

Put together your egg rolls. Spoon about 1/4 cup of mixture onto the wrap, top with 1 tsp of pickles, then roll.

Spray all sides of the egg rolls with oil and cook in air fryer at 370 degrees for 7 minutes, flipping halfway through.
