Spicy blackened shrimp served over rice with vegetables.

1 pound shrimp
1 cup rice
1 cup corn
1 red bell pepper
2 tablespoon cilantro
1 lime
2 tablespoon olive oil
1 avocado
1 1/2 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon onion powder
Salt & pepper to taste

Cook rice according to directions.

In a large bowl, toss shrimp with cumin, paprika, garlic powder, onion powder, salt, and pepper until evenly coated.

Heat 1 tbsp of olive oil over medium-high heat and cook shrimp until opaque, about 5 minutes.

In a medium bowl, combine corn, red bell pepper (chopped), cilantro, 1 tbsp olive oil, juice of 1/2 lime, salt, and pepper.

To serve, add rice and shrimp to your bowls, then top with corn salsa and slices of avocado. Squeeze remaining lime juice on top.
