Air Fryer Chicken Tenders

Ingredients

  • 1 1/2 pound chicken breast, cut into tenders
  • 2 tablespoon + 1 tsp salt
  • 1 tablespoon sugar
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne
  • 3 tablespoon flour
  • 2 eggs
  • 2 cup panko breadcrumbs

Instructions

  1. 1.Mix 4 cups water with 2 tbsp salt and 1 tbsp sugar in a large bowl. Add the tenders and let them brine for at least 30 minutes or up to overnight.
  2. 2.In a small bowl, mix together remaining 1 tsp salt, pepper, paprika, garlic powder, onion powder, and cayenne.
  3. 3.In a separate bowl, add flour, eggs, and 1 tsp of the seasoning mix. Mix well until you get a batter-like consistency. Add water if too thick as needed.
  4. 4.On a large plate/pan, mix the breadcrumbs with the remaining seasoning mix.
  5. 5.Remove tenders from the brine and pat dry. Dip the tenders in the egg mix first, then in the breadcrumbs. Lay them on a parchment paper lined baking sheet.
  6. 6.Preheat air fryer to 400 degrees (will cook for 14 minutes).
  7. 7.Spray the top side of the chicken with oil spray. Place the sprayed side face down in the air fryer basket and spray the other side. Cook tenders for 14 minutes, flipping about halfway through.
